There are a few main knives that you need in your kitchen. What we are going to go through what knives you need and how to use them.
There are 3 main knife companies that I suggest you to buy. Which are Henckels, Wusthof, and Victorinox.
All three are used in the professional kitchen and are well made. I have used all three in my 24 years of cooking and have found that I prefer the Victorinox better than the other 2.
Because I like how it feels in my hands. The one that has a plastic handle I have found that my hand cramps less with this knife when you are prepping for service for 4 hours straight.
The other reason I find that the Victorinox brand holds a slightly better edge than the other two brands.
Now we have that out of the way let’s get back to what we were going to talk about.
The chef knife if the one knife that is crucial to have. There are three sizes of chef knives you can buy. Which are 6”, 8”, and 12” all do the same thing? It is all about what you like to use. The last chef knife I bought was a 12” one because, I was the saucier at The Four Seasons Resort in Palm Beach, FL. and needed a big knife to cut up vegetables to back the stocks for the entire hotel.
The chef knife is what use for your main cutting jobs. You use it to dice, mince, and julienne all of your vegetables. You also use it to cut up your lettuces and herbs. You can use it to slice your meats after you cook it for a nice presentation for the plate.
A boning knife you use for precise cutting around the bone. It has a very narrow blade that is very stiff so you can get into the joints of the animals and cut the tendons easily. I use it for breaking down chicken and have used it to take the rib bones off of whole rib eyes. It’s nice when you need to get into a small spot.
Pairing knives are good for small cutting for garnishes. I use them for cutting stuff like strawberries and mushrooms. If you are into garde manger and making swans out of apples then you are going to use a paring knife to it.
The slicer is used for slicing meat. It is a long thin flexible blade that you can use to slice beef tenderloins, prime rib and even smoked Salmon. With the thin blade you can it makes it easy for you to cut thinly.
Bread knives have a serrated blade with a bunch of teeth on it. So you can cut all kinds of bread. Bakers also use it to cut cakes the way they need to.
My favorite knife is a Vegetable clever. This is not a must need for the kitchen. I am talking about it because it is my most favorite knife in my collection. I got it for Christmas along time ago and I still have it and is what I use when I am cooking. My wife is afraid of it. she thinks it a little too big for her. It did take me a bit to get used to it also.
